Meals around the family are less common today than in the past. As a result of small families and working wives, more than half of all Americans eat more than haft their meals away from homes.

The main advantages of this new pattern of American eating are the fast food chains where edible things roll out like car parts on an assembly line. The fast food industry has been growing at a rate of 15 percent a year. Pizza has become a staple(主食), and the hamburger billions sold annually has replaced the hot dog as the American national dish.

In addition to pizza and hamburger, American appetites are regularly whetted by such fast food as fried fish and chicken, French fries, onion tings, soft drinks and shakes. Many of these foods have been attacked by nutritionists and public health physicians because they are high in fat and sugar. But no matter what is said about them by health professionals, the 140 000 fast food companies and shops are likely to continue to prosper and multiply because they are fast, inexpensive, attractive to youngsters and let's be honest millions like the taste of what's dished up.

The main problem with most fast food meals is that they're not nutritionally balanced. Those of pizza, chicken or beef usually contain more than enough protein for a child or adult for one meal. But for the number of calories they provide—generally more than a third of an adult's daily requirements, they tend to oversupply you with fats and salt and to undersupply you with vitamins A and C, several B vitamins and iron. While pizza is one of the better, balanced fast foods, with plenty of protein and less fat than other types of meals, it is especially high in salt content, a negative factor for those who are easy to develop high blood pressure. Fast food meals are also sadly deficient in vegetables(except potatoes) and fruit. Thus a good rule of thumb is to eat salad, vegetables and fruit with your other meals on the days when you eat fast food.

Selecting a nutritious drink at a fast food restaurant is often difficult. Milk and fruit juice(not fruit drink), if on the menu are probably the best choices.

Another pitfall(隐藏的危险) is French fried potatoes. As they come from the ground, potatoes are a nutritional bargain low in fat, high in desirable complex carbohydrates. But when fried in deep fat, potatoes become a high fat, high calorie food. A typical fast food serving of fries contains 200 or more calories, too many of them fat calories.

Mediterranean Diet The Mediterranean diet is based upon the eating patterns of tradit
ional cultures in the Mediterranean region. Several noted nutritionists and research projects have concluded that this diet is one of the most healthful in the world in terms of preventing such illnesses as heart disease and cancer, and increasing life expectancy. The countries that have inspired the Mediterranean diet all surround the Mediterranean Sea. These cultures have eating habits that developed over thousands of years. In Europe, parts of Italy, Greece, Portugal, Spain, and southern France adhere to principles of the Mediterranean diet, as do Morocco and Tunisia in North Africa. Parts of the Balkan region and Turkey follow the diet, as well as Middle Eastern countries like Lebanon and Syria. The Mediterranean region is warm and sunny, and produces large supplies of fresh fruits and vegetables almost year round that people eat many times per day. Wine, bread, olive oil, nuts, and legumes are other staples of the region, and the Mediterranean Sea has historically yielded abundant quantities of fish. International interest in the therapeutic qualities of the Mediterranean diet began back in the late 1950s, when medical researchers started to link the occurrence of heart disease with diet. A Dr. Ancel Keys performed an epidemiological analysis of diets around the world (epidemiology being the branch of public health that studies patterns of diseases and their potential causes among populations). B Entitled the Seven Countries Study, it is considered as one of the greatest studies of its kind ever performed. C In it, Keys gathered data on heart disease and its potential causes from nearly 13,000 men in Greece, Italy, Croatia, Serbia, Japan, Finland, the Netherlands, and the United States. The World Health Organization (WHO) showed in a 1990 analysis that four major Mediterranean countries (Spain, Greece, France, and Italy) have longer life expectancies and lower rates of heart disease and cancer than other European countries and America. The data are significant because the same Mediterraneans frequently smoke and dont have regular exercise programs like many Americans, which means that other variables may be responsible. Scientists have also ruled out genetic differences, because Mediterraneans who move to other countries tend to lose their health advantages. These findings suggest that diet and lifestyle. are major factors. The Mediterranean diet gained even more notice when Dr. Walter Willett, head of the nutrition department at Harvard University, began to recommend it. Although low-fat diets were recommended for sufferers of heart disease, group of Mediterraneans in his studies had very high intakes of fat, mainly from olive oil. Willett and others proposed that the risk of heart disease can be reduced by increasing one type of dietary fat--monounsaturated fat--the type found in olive oil. Willetts proposal went against conventional nutritional recommendations to reduce all fat in the diet.
